Friends of Lakeside Lab Speaker Series to feature talk by “Cricket Lady” Shelby Smith July 12

(Okoboji)-The Speaker Series at Lakeside Lab will continue on Tuesday evening. KUOO’s Becky Thoreson has details:

The Friends of Lakeside Lab Science Seminar Series will feature Shelby Smith, the owner of Gym-n-Eat Crickets on Tuesday evening. Smith says she began raising crickets for consumption a few years ago. “Everybody always asks, why crickets? Crickets are 64% protein, they’re double the protein of beef. They have more iron than spinach, more calcium milk, they’re a great source of vitamin B12, they have Omega-6s and Omega-3s, but I do like to tell people, all of that doesn’t matter if they’re super, super, good for you, if they taste terrible. So, my goal is to make sure that they are the tastiest first cricket that anybody’s ever had. Our roasted crickets are our best sellers. We have 8 flavors of those.”

She adds that she will be bringing samples of her product to the talk. “I will absolutely have crickets in tow for my talk. It’s one of those things, I like to prime the crowd with all of the educational pieces and hopefully by the end of my talk people are a little more open and a little more willing to try the crickets. So, I always bring samples along. I have these ‘I ate a Cricket’ stickers that you have to earn by eating your cricket, so hopefully we get a few people that can earn their sticker. “

Smith will speak at Mahan Hall on the Lakeside Campus starting at 7 o’clock Tuesdsay evening The talk is free and open to the public.
