(Estherville)– The cafeteria at Iowa Lakes Community College is doing its part to be more environmentally friendly.
Bill Lapczenski, Director of Auxiliary Services and Student Life Facilitator for the college, says starting this fall, cafeterias at both the Emmetsburg and Estherville campuses will go to “trayless dining”.
Lapczenski says they decided to go without trays after reviewing results of a study by a food service provider. He says it pointed out several efficiencies, including eliminating the need for washing trays thereby reducing the use of chemicals and drying agents; it lessons the ecological footprint; persuades students to participate in a “green” initiative that has both a personal and community impact; and that it reduces food waste.
Lapczenski says trays will still be available for those with disabilities or other medical challenges.
He says a number of other institutions of higher learning have adopted trayless dining in their cafeterias, including the University of North Carolina, University of Florida, New York University and Georgia Tech.
